Tacos

Tacos have a lot of ingredients if you want all of the toppings. We will bring toppings we can use in other meals. Tomatoes & cheese will also go with breakfast. We will use yellow onion as we bring them for the paninis and eggs. Salsa, we will put in a smaller container. Tortillas also work well with peanut butter and jelly for lunch. We tend to skip lettuce as we don't use it a lot while camping, so too much of it would go to waste. We sometimes bring tortilla chips, depending on space.

Directions

Pre-cook the meat (we've used beef, turkey, and cut up chicken) with seasoning (homemade, or store bought). Let cool, then place in Zip-lock bag and freeze.

Ingredients:

  • Taco meat

  • Tortillas

  • Salsa

  • Cheddar cheese

  • Yellow onion

  • Tomato

  • Canned corn

  • Baked beans (optional)

At the campsite:

Heat up the meat, canned corn, and baked beans. Serve on tortillas with all of the toppings.

 

Tips:

  • Since this meal has so many fresh ingredients, this tends to be one of our first meals.

  • We've tried pre-chopping the toppings. This takes up more space in the cooler, and the ingredients don't last as long. Therefore, we tend to pack the produce whole and just cut what we need for that meal.

  • This is a meal that we save any leftovers. Mix meat and beans together in a storage bag, store in the cooler. Then we will make quesadillas for lunch, or another dinner.
