Panini

We love making paninis for lunch or dinner. They are hearty, and use the same ingredients we bring for eggs. We tend to bring our two burner stove with us when we are driving around checking out the parks, so we are able to make these even on the go. The kids usually need a break at lunchtime, so we don't feel bad taking the extra time to make these wonderful sandwiches. After the break and lunch, they are usually ready to go again. We won't do this everyday, but some of the days that we just need a break.

Ingredients:

  • Sourdough Bread (this bread doesn't get smashed like sandwich bread, and tends to be heartier)

  • Sandwich meet (we usually get turkey from the deli).

  • Butter

  • Cheese from the deli - our favorites are pepper jack and Havarti

  • Yellow onion

  • Tomato

Butter the bread, and slice the tomato and onion. Toast the bread in the cast iron. While it's toasting, fries up the onion and tomato, and will place the sandwich meat with the cheese on top. Then put together the sandwich. We will cut the sandwich in half and make 3-4 sandwiches for the family. These go well with potato chips and watermelon.
