Easy Picnic Lunch

When we're visiting National Parks, most of our lunches are away from our campsite. This is an easy one to have for a quick stop. We've also brought it to the beach, on canoe trips.

Ingredients:

  • Crackers

  • Cheese

  • Bell pepper

  • Humus

  • Cucumbers

  • Carrots

  • Peperoni (my kids prefer peperoni over summer sausage)
  • Apples

We find that vegetables, fruit, and cheese last longer if we bring them whole, and cut them as needed on the trip. I cut the vegetables, cheese, and fruit while we're making breakfast. Then we put them in a small soft-sided cooler for easy access for lunch. It also makes it easier if there is a little walk to the picnic table. We've also thrown in the cucumbers and carrots without peeling them. If we do that, we make sure to put the peeler in the cooler.
