Copycat Avocado Wrap

This has become a family favorite. We love eating these out, but have also made them at home several times. This summer, we started making them while camping. They are absolutely delicious. We do need to make these early in the trip as it's a lot of fresh ingredients.

Ingredients:

  • 6 Tortillas

  • 1/2 cup mozzarella

  • 1-2 ripe avocados

  • 1/2 cup corn (frozen, fresh, or canned depending on cooler space)

  • 1/2 cup cherry tomatoes sliced in half

  • 5 pieces of bacon cut up small

  • 2 cups arugula

Sauce

  • 1/4 cup pesto

  • 1/4 cup yogurt or mayo

Cook the bacon, this can be done during breakfast and stored until lunch or dinner. Add all ingredients except the tortillas and sauce to a bowl (we use one of our pots). Mix the pesto and yogurt in a small bowl (I like premixing it and putting it in a small mason jar). Pour the sauce over the ingredients. Heat up the tortillas lightly. Put some of the filling in the tortilla, wrap up the tortilla and enjoy!

This last time we just kept making more, and handing them out a half at a time.
